99 Rye: Tennessee Rye Malt
Tennessee Rye Malt is our rich, malt-forward approach to rye. Inspired by one of our Experimental Distillery’s first batches of whiskey, our version of this rare and flavorful style was made from an abundance of slow toasted and drum roasted rye malt. The result is a bold reinvention of rye, brimming with sweet and savory notes of candied fruit, herbs, and spice.
Mash Bill: Pale Malted Rye, Yellow Corn, Caramel Malted Rye, Chocolate Malted Rye
Age: Greater than 3 years
Proof: 99 (49.5% ABV)
Fermentation: Attemperated, 7 days
Cooperage: Charred Oak Barrels, 53 gallon
Filtration: None. Barrel occasionally captures barrel sediment
Batch Size: 6-10 barrels
Style: Straight Rye Malt Whiskey
Tasting Notes: Fruit cake, cola spice, sage and toasted rye. Full bodied with a malty sweet & spicy finish.

91 Proof – Our original “Barrel 91” recipe, solera barrel finished. Made from 4 grains including 3 specialty malts.

111 Proof – Unfiltered & cask-forward. Made from a select, single fermentation of 4 grains, including 3 specialty malts.
