Tennessee High Malt
In March of 2017, construction of our Riverfront Distillery Headquarters neared completion, and our team narrowed their search for the recipes that would be made there. After sampling and tasting through over 100 Experimental barrels, Barrel #91 was selected overwhelmingly as “The Barrel". Today, our distillers make this 4 grain, 3 malt recipe almost every day, and refer to it simply as, “Barrel 91”. With notes of dried apricot, sweet tea and honeyed toast, this whiskey strikes a perfect balance between a classic straight bourbon profile, and the rich, distinct character of a style we call Tennessee High Malt. Mash Bill: Yellow Corn, Rye Malt, Caramel Malt, Honey Malt
Age: 3+ years
Proof: 102 (51% ABV)
Cooperage: Toasted & Charred Oak, 53 gallon

*Collector’s Note: Barrel 10 of 10 in "The Road to Tennessee High Malt" Series. This is the original pot-distilled "Barrel 91" recipe - barreled at our Experimental Distillery in 2016. Although this single barrel bottling remains one of the most rare and special releases in our distillery's history, approximately 91 bottles from the original barrel were dumped into the inaugural filling of our 4000-gallon solera barrel. Because this solera barrel is never emptied completely, traces of the original barrel remain within every bottle of "91" today.
