What Is Tennessee High Malt?
Tennessee High Malt is our signature style of Straight Bourbon Whiskey. Made with 4 grains, including 3 select specialty malts, our process includes extended 7-day fermentation, aging in two different charred and toasted white oak barrels, and a Solera barrel finishing. Each ingredient and each step of the process plays a unique role in creating the rich and complex character of Chattanooga Whiskey.
4-Grain Mash Bill
Our signature 4-grain, high malt mash bill is the original “Barrel 91" recipe developed at our Experimental Distillery. Made with yellow corn, malted rye, caramel malt and honey malt, the mash bill merges classic bourbon structure with a rich, malt-forward style.
3 Select Specialty Malts
After sprouting for 3-5 days, these 3 grains are toasted or roasted at precise temperatures to deliver a richness not found in raw grain. Our slow-toasted rye malt adds a rich, baking spice depth to the whiskey; our roasted caramel malt layers in sweet notes of praline; and our honey malt is delicately stewed and kilned to bring out hints of honey on toast. Together, they put the "High Malt" in "Tennessee High Malt”.
Extended 7-Day Fermentation
Our “distiller’s mash" is transformed to "distiller’s beer” with the help of a malt-forward yeast strain, classic to scotch and malt whiskey production. By extending and temperature-controlling these fermentations, the fermentation character becomes more subtle and complex, and further highlights the malty-sweet character of our whiskey.
Barrels
Aged for greater than 2 years, our Tennessee High Malt extracts even more flavor (and all of its color) from two different types of oak barrels. Half of these barrels are charred to a traditional #4 specification, for a classic, caramel & vanilla bourbon profile. The other half are slow-toasted for 30-35 minutes, prior to being charred to a #3 specification. This precise toasting process develops character within the wood that - just like our malt - highlights sweet, toasty and confectionary-rich aromas and flavors within the whiskey.
Solera Barrel
After more than 2 years in the original barrels, our signature recipe is transferred to a 4000-gallon charred, oak barrel, where it undergoes our own unique version of the classic solera method. This magnificent vessel - which never goes empty - is topped up with 8-12 newly mature barrels after every small batch bottling. The result is a whiskey with an ageless, fruit-forward complexity unlike any other.
Chattanooga Whiskey Cask 111
Single Fermentation, Small Batch
Hand-selected by our distillers, each batch of Cask 111 highlights a small selection of barrels with a signature cask-forward flavor profile. Representing just one select distillation run, each 8-12 barrel batch celebrates the slight nuances inherent to the process of crafting a true, small batch whiskey.
Unfiltered
By omitting the normal filtration process, Cask 111 is able to retain every bit of flavor and complexity from the rich ingredients and long maturation process. The result is like you took it straight from the barrel.
