Formulated each year by Founder Tim Piersant to commemorate our anniversary, Founder’s Anniversary Blend is a solera-style expression blended from our 3 one-of-a-kind charred oak solera barrels. Distilled in Chattanooga, TN, and Lawrenceburg, IN, this combination of traditional and innovative recipes showcases the dynamic balance between multiple styles and sources of whiskey – each one symbolic of our past, present, and future. About Our Solera Barrels

 
Three large barrels in a room
Located within our Riverfront Distillery, our Solera Room enshrines 3 unique whiskey styles – all of which utilize our version of the time-honored solera blending process. Each year to commemorate our anniversary, our Founder Tim Piersant evaluates the whiskey within each barrel – trialing various blends to highlight the best of each recipe. After each year’s blend is complete, the distilling team refills each tank with newly mature barrels, where they will quietly marry until the following year.

 

1816 – The Past

The whiskey that galvanized a community and helped change century-old prohibition laws.

 

BARREL VOLUME: 625 Gallons

STYLE: Straight Bourbon Whiskey

MASH BILL: Yellow Corn, Unmalted Rye, Pale Malted Barley

AGE: Greater than 4 Years

DISTILLED IN: Lawrenceburg, IN

BLEND INCLUSION (2025): 23%

COOPER: Foeder Crafters of America (St. Louis, MO)

FIRST FILLED: February 2022

FOUNDER’S FACT: This is the only barrel in either of our distillery that holds sourced whiskey. Since 1816 represents our past, black walnut powder was used as an all-natural stain to give the barrel an antique aesthetic. This year’s fill consists of 1816 that was double barreled in new toasted and charred casks for 2 years prior to dumping into the 1816 Solera.

TASTING NOTES: Apple turnover, toasted raisin bread, cream soda, and snickerdoodle cookie.

 

91 – The Present

STYLE: Straight Bourbon Whiskey

MASH BILL: Yellow Corn, Malted Rye, Caramel Malted Barley, Honey Malted Barley

AGE: Greater than 2 Years

DISTILLED IN: Chattanooga, TN

BLEND INCLUSION (2025): 58%

COOPER: Foeder Crafters of America (St. Louis, MO)

FIRST FILLED: April 2017

FOUNDER’S FACT: From 2019 to 2025, approximately 300 barrels of our signature Barrel 91 recipe have moved through this iconic barrel.

TASTING NOTES: Butterscotch pudding, dried apricot, honeyed toast, and pound cake.

 

Infinity – The Future

BARREL VOLUME: 1645 Gallons

STYLE: A Blend of Straight Whiskeys

MASH BILL: 26 Different Mash Bills (To Date)

AGE: Greater than 3 Years

DISTILLED IN: Chattanooga, TN

BLEND INCLUSION (2025): 19%

COOPER: Foeder Crafters of America (St. Louis, MO)

FIRST FILLED: August 2022

FOUNDER’S FACT: For its third fill (and second top-up), the Infinity barrel was refilled with 31% column distilled rye malt whiskey + 69% column distilled malt whiskey. In total, 5 different mash bills were used in the fill, including a delicately flavored malt whiskey made with Italian Adriatic Coastal Barley malt + an alternate version of our 99 Rye recipe made with a heavily toasted rye malt.

TASTING NOTES: Red licorice, dried cherry, and star anise, with a hint of smoke.
