ABOUT THIS SINGLE BARREL:
Barrel #51 is the last “Wheated Style High Malt” from our cellar. Like Batch 005, this mash bill and recipe was inspired by the wide world of scotch grain whiskies. Made with 4 types of malted wheat – dark, caramel, oak smoked and chocolate – these 4 rich malts take the soft and sweet wheated bourbon style to a richer, and more complex high malt territory.
Barrel: 53 gallon, #4 char + toast
Age: 3 years, 1 month
Mash Bill: yellow corn, dark wheat malt, caramel wheat malt, oak smoked wheat malt, chocolate wheat malt
Yeast: Ale Blend
Tasting Notes: Rock candy, fresh baked bread, plum, with a hint of cocoa powder in the finish
