Since 2017, nearly every drop of Chattanooga Whiskey has been aged in oak barrels made by the Independent Stave Company (ISC). Handcrafted in Lebanon, KY since 1912, ISC has gained a world-wide reputation for quality – by mastering every step of the process, “from forest to barrel”. From company-owned forested land & log yards, to their multiple mills & cooperages, ISC’s vertical integration provides Chattanooga Whiskey with full transparency & traceability to the materials & coopering process of every single barrel.
A Toast for Every Recipe
Since beginning our partnership with ISC, Chattanooga Whiskey has fully utilized the cooperage’s full range of small batch specialty barrel offerings – becoming one of the first craft distilleries to utilize ISC’s toasted & charred barrels to age their signature, everyday expressions like 91 & Cask 111.
Beginning in 2019, the Chattanooga Whiskey distilling team took this approach to the next level – collaborating with ISC’s research & development group to formulate a custom-toasted barrel recipe for each one of our signature mash bills. Each of these recipes – “Barrel 91”, “Rye Malt”, “Wheated”, “Roasted” and “Peated” – were each custom-toasted & charred at different levels and lengths – to complement the character of the underlying mash bill. Today, these assortment of barrels can be found in nearly every one of our whiskey expressions.
