Now introducing Experimental Batches 011 & 012!

It’s been 14 months since we released Batch 009 & 010 of our Experimental Single Batch Series, and now we’re back with two of our most unique experimental releases to date: Batch 011 & Batch 012. 

For this sixth release, we decided to go for the gold. Liquid gold, that is. What do whiskey, maple syrup, and honey all have in common? At one point or another, all three have been referred to as liquid gold. Check out the details that make these releases special below!

Batch 011 -Maple Syrup Barrel Finished

This autumn-inspired batch explores what happens when we swap out some of the grain in our Tennessee High Malt mash bill for a mixture of sweet potatoes and pure maple syrup. This particular maple syrup was selected for its rich, intense dark fruit and caramel character. After aging in new, charred white oak barrels for up to 3 years, we then finished the whiskey in maple syrup barrels from Kentwood, Michigan for 8 months.  The result is a soft, sweet and extremely complex dram that you might be tempted to pour on your pancakes!

Mash Bill: Yellow Corn, Rye Malt, Sweet Potatoes, Maple Syrup
Age: 2+ years
Barrel: Toasted & charred oak, 53 & 25 gal 
Finishing Barrel: Bourbon-aged maple syrup barrels for 8 mos 
Batch size: 3 barrels 

Bottled at 102 proof, our Maple Syrup Barrel Finished is extremely limited in quantity with only 94 cases produced. 

Batch 012 – Mead Barrel Finished

This riff on our Tennessee High Malt pays homage to the world’s first alcoholic beverage: mead! Made from a bourbon mash, this recipe included a heavy-hand of one of our distillers’ favorite grains: honey malted barley.  After up to 3 years of aging in toasted & charred white oak barrels, the straight bourbon whiskey was then finished in rare and flavorful heather honey mead barrels for up to 8 months.  The mead – a sweet viscous beverage made from fermenting honey – was crafted by our friends at Moonlight Meadery in Londonderry, New Hampshire, using honey produced from the purple-colored blooms of the heather plant. The result is sweet, floral and worthy of pouring into your finest chalice!

Age: 2+ years
Barrel: Toasted & charred oak, 53 & 25 gal 
Finishing Barrel: Heather honey mead barrels for up to 8 mos 
Batch size: 5 barrels 

Bottled at 102 proof, only 167 cases were produced.
