Announcing Batch 002 and Batch 003!

Nearly three months after our historic release of Experimental Series Batch 001, we are back with our second AND third reveal: Batch 002 and Batch 003!

Back in August, we kicked off the Experimental Series by introducing our first of many experiments in the world of Tennessee High Malt. For this second release, our distillers have taken it one step further – exploring the element of smoke in our high malt bourbon whiskey. 

Batch 002

Batch 002 is a straight bourbon whiskey we’ve named Smoked High Malt. This Tennessee High Malt was made with non-GMO yellow corn, rye malt, caramel malt and cherrywood smoked malt – for a light, but noticeable smoked character. Similar to Batch 001, we also finished Batch 002 in our award-winning 1816 bourbon barrels prior to bottling at our Experimental Distillery. Aged in a combination of 53 gallon and 25 gallon barrels for at least two years, the addition of smoked malts lends notes of dried fruit, smoke, chocolate cake and gingerbread.

Yielding around 90 cases of whiskey, Batch 002 is our most exclusive offering to-date! Due to the limited quantity, we will be selling Batch 002 out of our Experimental Distillery ONLY, so get it while it lasts! 












Batch 003

Batch 003 is also a straight bourbon whiskey, but finished with our newly introduced Native finishing process (check out a full write-up of the 1816 Native series here!). Named Native Barrel, this batch was made with a very similar mashbill to Batch 002, but finished in smoked beer barrels that originally held our Experimental Whiskey.  

This wasn’t any ordinary smoked beer – this smoked doppelbock was a local collaboration with our friends at OddStory Brewing Co. here in Chattanooga, who utilized both stave-smoked and cob-smoked malt in the beer – both of which were produced from our very own distillery ingredients! The result was a fantastic beer and one we were proud to share a cask with.

Aged for at least two years in 25 gallon barrels and finished in “Native” barrels for 30 days, Batch 003 Native Barrel showcases a complex flavor profile with notes of maple, molasses, cocoa, chocolate malt and a light smoky finish. Slightly larger than Batch 002, Batch 003 yielded around 135 cases and will be available both at the Experimental Distillery along with select retailers around Tennessee.

Each batch utilizes a multitude of grains, barrels, techniques and unique ingredients to create whiskies that are truly one-of-a-kind.
